Morpho-Physiological Traits, Phytochemical Composition, and Antioxidant Activity of Canephora Coffee Leaves at Various Stages

Coffee leaves contain a wide range of leaf compounds, which vary by growth stage. Recently, the importance coffee metabolites with beneficial phytochemicals has been widely identified. This research investigated Canephora coffee’s morphological and physiological development analyzed phytochemical composition main were harvested classified into following five stages: S1 (leaf age 1–4 days), S2 5–8 S3 9–14 S4 15–20 S5 21–27 days). The antioxidant activity, total phenol content, flavonoids, tannin content at different stages observed. results indicated that highest values for area, dry weight, greenness, chlorophyll carotenoid found last stage (S5). specific area (SLA) differences had higher in stages. youngest phase (S1) was less green, more yellow, brighter color than mature phase.
